خلاصه یا چکیده
|

|
هدف از پژوهش حاضر که به سفارش سازمان جهاد کشاورزی استان تهران در سالهای 1397 و 1398 انجام شده است، سنجش ضایعات مرحله برداشت و پس از برداشت سیب در منطقه دماوند بوده است. پژوهش حاضر از لحاظ ماهیت دادهها، کمی؛ از بُعد هدف، کاربردی و از نظر کنترل متغیرها غیر آزمایشی است. جامعه آماری آن شامل باغداران سیب در منطقه دماوند، تجار محلی، تجار منطقهای، سردخانه داران، خردهفروشها و واحدهای پشتیبانیکننده امر تولید نظیر مروجان منطقه بود. پژوهش شامل بررسی کیفی و کمی بر مبنای اطلاعات کتابخانهای و میدانی است. مطالعه میدانی از طریق بررسی و بازدید و مصاحبه انجام شد. علاوه بر این، ارزیابی و مشاهدات میدانی برای جمعآوری اطلاعات کمی انجام شد. اطلاعات اولیه و مبنا پس از تشکیل شبکه خبرگان استانی و از مجموع 12 مورد بازدید، 17 فقره مصاحبه و 5 مورد ارزیابی و مشاهدات میدانی از فعالان زنجیره تولید سیب از طریق تکمیل پرسشنامههای از قبل طراحی شده به دست آمد. در منطقه دماوند ضایعات مشهود و قابل اندازهگیری در مراحل ریزش نزدیک برداشت، برداشت، جابهجایی و انبارش در سطح باغ، سورتینگ، درجهبندی و بستهبندی تا خروج از درب باغ در مجموع بین 5-8 درصد در صورت اعمال مدیریت پس از برداشت مناسب و به طور میانگین 1 /2 ± 2 /6 درصد بود. میزان سیبهای پادرختی در اثر ریزش قبل از برداشت در حدود 3 درصد بود. تقریباً 40 درصد از پادرختیها در منطقه دماوند، درجه 3 محسوب میشوند و در مراحل سورت و درجهبندی از مجموعه جدا شده و به صورت کنسانتره یا برای خوراک دام مصرف میشود. 15-20 درصد پادرختیها قابلمصرف هستند اما قابلرفتن به سردخانه نیستند و 40-45 درصد برای مصرف به صورت خردهفروشی به عنوان مثال در مسیر گرگان به فروش میرسند. از مجموع ضایعات در مرحله قبل از برداشت و برداشت در سطح باغات منطقه دماوند، میزان سیبهای ضایعاتی در اثر آفتابسوختگی 5 /0±1 /7 درصد، سیبهای ضایعاتی در اثر حمله پرندگان 8 /0±1 /11 درصد، میزان سیبهای بدشکل 9 /3±1 /6 درصد و میزان سیبهای آفتزده و لکهدار 4 /3±6 /7 درصد بود. در بررسی میدانی به عمل آمده تقریباً 5 /67 درصد سیبها در سطح باغ به درجاتی ضربدیدگی داشتند که از این تعداد 1 /8±7 /19 درصد آثار بارز و مشهود ضربدیدگی روی آنها وجود داشت. به نظر میرسد برای کاهش ضایعات در سطح باغات اولین و مهمترین کار، ارائه راهکارهایی برای کاهش این معضل باشد. در میان سیبهای ضایعاتی 2 /18± 6 /38 درصد موارد به دلیل آسیبهای ناشی از ضربدیدگی و لهشدگی و پوسیدگیهای ناشی از آن از چرخه فروش به سردخانه و تجار محلی خارج شدهاند. در سطح باغ درمجموع سه مرحله سورت، درجهبندی و بستهبندی مقدار ضایعات معادل 2 /1±1 /6 درصد از کل ضایعات برآورد میشود که از این میزان 2 /15 درصد به دلیل ضربدیدگی سیب، 4 /14 درصد به دلیل دسترسی نداشتن به مواد اولیه بستهبندی، 7 /61 درصد به دلیل دسترسی نداشتن به نیروی کار ماهر و 7 /8 درصد به دلیل سایر عوامل اتفاق افتاده است. پیدایش یا گسترش آفات و بیماریها (1 /23 درصد)، افت وزن (9 /38درصد)، رسیدگی بیش از حد میوه در طول مدت انبارداری (2 /8 درصد) و بروز فسادهای میکروبی و شیمیایی بهویژه در سیبهای آسیبدیده در مراحل قبل (8 /21 درصد)، عمدهترین علل ایجاد ضایعات در مرحله انبارداری در سطح باغ (انبارش در سطح باغ زیر درختان، انبارش تا زمان بار کردن در وسیله نقلیه و انبارش کوتاهمدت در سالنها سورت و نگهداری) محسوب میشوند. مقدار متوسط ضایعات در مرحله انبارش موقت و نگهداری در باغات 7 /11±5 /21 درصد از مجموع ضایعات در باغ است. بر اساس پرسشنامههای تجار محلی، منطقهای و خردهفروشها و در مجموع بررسیهای به عمل آمده میزان ضایعات سیب در مرحله حمل و نقل بین 2-10 درصد و به طور متوسط 5 /7 درصد برآورد میشود. معمولاً سیبها بین 6 تا 9 ماه از زمان برداشت تا فروش در سردخانه نگهداری میشوند. در سردخانههای با شرایط کنترلی بهتر، میزان ضایعات در سه ماهه اول کمتر است و در حدود 3 درصد برآورد میشود. در شش ماهه بعدی انبارداری میزان ضایعات به بالای 5 درصد میرسد؛ که عمدتاً به دلیل افت وزن (حدود 3 /4 درصد)، بروز و گسترش آفات و بیماریها (2-1 درصد) و فساد و پوسیدگی (5-1 /0درصد) محصول رخ میدهد. در برخی پرسشنامهها، سرمازدگی نیز جزو علل ضایعات ذکر شده است. بر اساس مصاحبههای انجام شده با تجار محلی کل ضایعات تجار محلی از مرحله برداشت تا خردهفروشی یا فروش به تاجران منطقهای در صورتی که نیاز به سردخانه نباشد و بلافاصله پس از خرید انجام شود، کمتر از 8 درصد است. در صورت سردخانه گذاری و نگهداری افت سردخانه نیز به این مجموعه اضافه میشود. در مدت نگهداری تا فروش سیب در حجرهها یا مراکز فروش، تجار در صورت لزوم عملیات سورتینگ و درجهبندی سیب را انجام میدهند. در این مرحله به دلیل فساد محصول، افت وزن و عملیات سورت کردن و درجهبندی مجدد ضایعاتی معادل 0 /15 تا 0 /17 درصد به وجود میآید که 3/9 درصد آن در اثر سورت، درجهبندی یا بستهبندی مجدد قبل یا بعد از سردخانه گذاری است. میزان ضایعات در بازارهای عمدهفروشی و با مکانیسمی شبیه تجار محلی بدون سورت و انبارداری0 /5-0 /8 درصد و به طور متوسط 5 /6 درصد برآورد شده است. تقریباً تمامی خردهفروشها مجدداً سیب را در مغازههایشان سورت، درجهبندی یا بستهبندی میکنند. بزرگترین مشکل خردهفروشها در این مرحله وجود سیبهایی با کیفیتهای مختلف در یک بسته به دلیل ضعف درجهبندی در مرحله باغ، یا تجار محلی و منطقهای هستند. بر اساس پرسشنامههای پر شده و مصاحبههای انجام شده به طور متوسط 3 /3 ± 8 /11 درصد ضایعات در مرحله خردهفروشی روی میدهد. بنابراین در مجموع در مسیر باغدار- تاجر محلی- خردهفروش (بدون انبارداری و سردخانه گذاری) به طور متوسط 5 /33 درصد ضایعات و در صورت سردخانه گذاری به طور متوسط 5 /40 درصد ضایعات سیب در منطقه وجود دارد. در صورت ورود سیب به چرخه عرضه از طریق بازارهای عمدهفروشی و ارسال به مبادی دورتر این رقم بین 40 تا 47 درصد تا رسیدن به دست مصرفکننده متغیر خواهد بود. در ادامه تحلیل SWOT انجام شد. برخی از اصلیترین علل ایجاد ضایعات در سطح باغات به عنوان نقطه شروع زنجیره که باعث گسترش فساد و ضایعات میوه در مراحل بعدی زنجیره میشود با برنامهریزی و آموزش مروجان محترم، باغداران و تجار محلی قابل پیشگیری است. علاوه بر این، توزیع اقلام مورد نیاز برای برداشت صحیح مانند سبد و کیسههای مخصوص برداشت، نردبان، وسیله حمل و نقل در بین درختان، جعبههای بزرگ و کوچک و سایهبان برای انبارش موقت سیب به باغداران، در کاهش ضایعات کمی در مراحل پس از برداشت مؤثر است. ایجاد زنجیره سرد در مراحل تولید و پس از آن و آموزش عملیات خوب نگهداری بهویژه در مرحله سردخانه گذاری مورد توصیه اکید است. با توجه به میزان تولید بالای سیب در منطقه و کوتاه بودن ماندگاری سیبهای آسیبدیده، اهمیت دادن The purpose of this study, which was commissioned by the Agricultural Jihad Organization of Tehran Province in 1397 and 1398, was to measure apple losses at the harvest and post-harvest stage in Damavand region. The nature and objective of this study was quantitative and practical and was experimental in terms of controlling variables. Statistical population included apple growers in Damavand region, local traders, regional traders, cold storage owners, retailers and production support units such as regional promoters. The research included qualitative and quantitative studies based on library and field information. The field study was conducted through surveys, visits and interviews. In addition, evaluation and field observations were performed to collect quantitative information. Preliminary and basic information was obtained after formation of provincial experts networks and a total of 12 visits, 17 interviews, 5 evaluations and field observations of apple production chain activists by completing a pre-designed questionnaire. In Damavand region, total of visible and measurable losses in the stages of near harvesting, harvesting, handling and storing at the orchard level, sorting, grading and packing to the exit of the garden door, was estimated between 5-8% in case of proper post-harvest management and the average was approximated as 6.2 ± 2.1. The amount of apples collected under the tree due to falling before harvest was estimated as 3%, of which approximately 40% included grade 3; separated during sorting and grading stages, for animal feed and to produce fruit concentrate. Although 15-20 % of the windfall apples were usable, they were not cold stored and 40-45% were being sold for retail use, for example in Gorgan. Of the total loss in the pre-harvest and harvest stages in the orchards of Damavand region, the amount of loss due to sunburn, bird attack, deformed apple and rotten blemished was calculated as 7.1± 0.5%, 11.1 ± 0.8% , 3.9% and 7.6± 3.4 %; respectively. In the field study, approximately 67.5% of the apples in the garden were bruised to some extent, of which 19.7± 8.1% had obvious signs of bruising. It seems that the first and most important practice to reduce loss at the orchard level is to provide solutions to reduce this problem. 38.6 ± 18.2% of this wasted apples were removed from the sales cycle to local cold stores and traders due to injuries caused by bruising, crushing and the resulted rotting. At the orchard level, the amount of loss at three stages of sorting, grading and packing, was estimated as 6.2 ± 1.2 % of the total waste, of which 15.2% occurred due to apple bruising, 14.4% due to lack of access to packaging materials, 61.7% due to lack of access to skilled labor and 8.7% due to other factors. Appearance or spread of pests and diseases (23.1%), weight loss (38.9%), overripe fruit during storage (8.2%) and occurrence of microbial and chemical spoilage, especially in damaged apples in the previous stages ( 21.8%), were the main causes of loss in the storage stage at the orchard level (storage at the orchard under trees, storage until loading in the vehicle and short-term storage in the sorting and storing rooms) were considered. The average loss in the temporary storage and storage stage in orchard was 21.7% of the total loss in the garden. Based on the questionnaires of local traders, regions and retailers, in general, the quantity of apple loss in the transportation stage was estimated between 2-10 % with an average of 7.5%. Apples were usually cold stored for 6 to 9 months from harvest to sale. In cold Stores and Warehouses with better control conditions, the amount of apple loss in the first trimester was less and was estimated at about 3%. In the next six months of storage, the amount of waste reached over 5%; which occured mainly due to the weight loss (about 4.3%), the occurrence and spread of pests and diseases (1-2%) and spoilage (0.5-1%) of the product. In some questionnaires, chilling burn was also mentioned as one of the causes of lesions. According to interviews with local traders, the total loss was estimated less than 8% from harvest to retail or sale to the regional traders, when apples was not refrigerated. In case of refrigeration and warehousing, the refrigeration loss would be added to this quantity loss. During the storage time until the sale of apples in the stalls or sales centers, traders performed sorting and grading operations of apples, if necessary. At this stage, 15.0 to 17.0 % losses could be occurred due to product spoilage, weight loss and sorting and re-grading operations, of which 9.3% could be due to sorting, grading or repackaging before or after refrigeration. The amount of loss in wholesale markets and with a mechanism similar to that of local traders without sorting and warehousing was estimated at 5.0-8.0% with an average of 6.5%. Almost all retailers sort, grade or pack apples in their shops again. The main problem for retailers at this stage was the presence of apples of different qualities in a package due to poor grading in the orchard stage, or local and regional traders. Based on the completed questionnaires and interviews, an average of 11.8 ± 3.3% of waste occured in the retail stage. Therefore, in total, there was an average of 33.5% of loss in the orchard owners-local trader-retailer marketing system (without warehousing and refrigeration) and 40.5% of apple loss in the case of cold storage. If apple fruits entered the supply chain through wholesale markets and shipped to more distant points, this estimated quantity would vary between 40 and 47% until it reached to the consumer. SWOT analysis was also performed. The main causes of waste in orchards as the starting point of the chain that caused corruption and fruit waste in the later stages of the chain could be prevented by planning and training respected promoters, gardeners and local traders. In addition, the distribution of items needed for proper harvesting, such as baskets and bags for harvesting, ladders, means of transportation between trees, large and small boxes, and canopies for temporary storage of apples to gardeners, could be effective for reduction of apple wastes in the post-harvest stages. Creating a cold chain in the production and postharvest stages and training Good Storage Practices (GSP), especially in the Cold store rooms and Warehouses, is strongly recommended. Due to the high production of apples in the region and the short shelf life of damaged apples, providing more facilities to the processing industry in this city is one of the most important proposed solutions for loss reduction.Keywords: Post-Harvest Technologies, Post-Harvest Management, Quality Loss, Quantitative and Qualitative Waste, Refrigeration, Waste Reduction
