انگور، مو، رز، یا تاک (Vitis vinifera L.) يكي از هرس‌پذيرترين گونه درختان ميوه مي‌باشد كه در موقع هرس حدود 80 درصد شاخه‌هاي آن حذف مي‌گردد. به همين دليل گفته مي‌شود كه قيچي باغباني كليد رمز برداشت ميوه انگور مي‌باشد. تاک برروي شاخه، گل و ميوه توليد مي‌كند. اما در يك شاخه يكساله باردهي جوانه‌ها به ترتيبي كه بر روي شاخه‌ها قرار دارند نسبت به رقم متفاوت است.، بطوريكه در بعضي جوانه‌هاي میانی و نسبتاً بالا، بارده مي‌باشند. بطوركلي يك تاک با اندازه متوسط مي‌تواند در آخر فصل رشد 25 تا 30 شاخه كه هر كدام داراي حدود 30 جوانه هستند، داشته باشد، يعني امكان دارد بر روي يك چنين بوته‌اي در آخر فصل رشد 750 تا 900 جوانه موجود باشد. تاک قادر نمي‌باشد كه بيش از 100 تا 150 عدد از اين جوانه‌ها را در فصل بهار وادار به فعاليت كند و بقيه جوانه‌ها در اين زمان از خواب بيدار شوند. اگر همين 100 تا 150 جوانه نيز رشد نمايند، فشار زيادي به بوته مو وارد مي‌شود و در نتيجه خوشه‌ها كم رشد خواهند گرديد. لذا بايد با انجام تربیت و هرس مناسب با درنظر گرفتن تعداد شاخه بارور يكساله و تعداد جوانه بارور متناسب با رقم تاک، كمك به تقويت بوته و بهبود كميت و كيفيت ميوه آن نمود. تابش آفتاب و دماي مناسب باعث بالا رفتن كيفيت ميوه انگور ميشوند، زيرا ميزان قند و مواد جامد، اسيد و مزه ميوه بستگي مستقيمي به تابش آفتاب دارد. از اين جهت با عمل تربیت و هرس مناسب، مي توان نفوذ نور را در تاج درخت افزايش داد و چون تابش نور بطور مستقيم بر روي خوشه¬ها موجب بهبود كيفيت حبه‌ها مي گردد. از این جهت نگهداري تعداد مناسب کافی جوانه بر روی شاخه یکساله (Cane) ، جهت داشتن محصول اقتصادي با كميت و كيفيت مناسب لازم وضروري است. ميزان هرس با توجه به شرايط آب و هوايي، سیستم تربیت و رقم متغيير است. در برخی ارقام داخلی و یا خارجی هرس کوتاه (2 تا 3جوانه‌ای)، هرس بلند (بالاتر از 4) و یا مختلط نیاز دارند. همچنین نوع سیستم تربیت به شرایط اقلیمی، نوع رقم و ...بستکی دارد. در جهان حدود 30 نوع سیستم هدایت و تربیت انگور طراحی و مورد استفاده قرار گرفته است که هر کدام از لحاظ هزینه احداث و نگهداری، رقم و قابلیت تولید متفاوت هستند. در این اثر سعی شده است به تمام این جنبه-ها از نظر فنی و ترویجی اشاره گردد که مورد استفاده عملی برای علاقمندان باشد.واژه های کلیدی: تاک، تاکستان، سیستم تربیت، عملکرد، کمیت و کیفیت.

Grape (Vitis vinifera L.) is one of the most susceptible species of fruit trees that during pruning about 80% of its casnes are removed. For this reason, it is said that gardening scissors are the key to harvesting grapes. The grapevine produces flowers buds and fruits on an annual branch (cane) on a biennial branch. But in canes, the fruiting of the buds differs from the cultivar in the order in which they are located on the branches, so that in some relatively high buds, they are fruiting. In general, a medium-sized vines can have 25 to 30 canes at the end of the growing season, each with about 30 buds, meaning that it may have 750 to 900 buds on such a vine at the end of the growing season. This grapvine is not able to make more than 100 to 150 of these buds active in the spring and the rest of the buds wake up at this time. If the same 100 to 150 buds grow, a lot of pressure will be put on the grapevine and as a result the clusters will grow less. Therefore, by performing proper training and pruning, considering the number of fertile branches of one year and the number of fertile buds appropriate to the vine cultivar, it is necessary to help strengthen the plant and improve the quantity and quality of its fruit. Sunlight and the right temperature increase the quality of grape fruit, because the amount of sugar and TSS, acidity and astringent taste of the fruit is directly dependent on sunlight. Therefore, with proper training and pruning, light penetration can be increased in the tree canopy and even direct light on the clusters can improve the quality of berries. Therefore, maintaining the right number of fertile annual branches (Cane) and the right number of buds on the branches, in order to have an economical product with the right quantity and quality is necessary. The amount of pruning varies according to climatic conditions, training system and cultivar. Some internal or commercial cultivars require short pruning (2 buds), long pruning (above 4) or mixed pruning. Also, the type of training system depends on climatic conditions, type of cultivar, etc. In the world, about 30 types of grape growing training systems have been designed and used, each of which is different in terms of construction and maintenance costs, cultivars and production potential. In this work, an attempt has been made to point out all these aspects from a technical and promotional point of view that can be used practically for those who are interested.Key words: Grape, Training system, Quality, Quantity, Yield, Vineyard.
